To help keep her on track she has developed amazingly delicious meals that keep you on track. These meals are made with healthy carbohydrates and high fiber and of course just the right amount of protein and low fat. Lots of flavor and zero guilt!

These recipes are easy to follow and will leave you and your family satisfied through the holidays.

 

Guiltless Pumpkin Pie
Tastes just like the real thing only without a crust. You can also make individual servings in muffin tins.

Ingredients:
1 can of canned pumpkin (if also making the pumpkin cheesecake recipe, save 1/3 of a cup for that recipe)
1 cup liquid egg substitute
1 cup low fat cottage cheese, pureed
1 ¼ - 1 ½ cups Splenda for baking
2 tsp. pumpkin pie spice

Directions:
Heat oven to 350 degrees
Spray pie plate or muffin tins with a cooking spray
Beat all ingredients until thoroughly mixed
Pour into the pie plate or divide evenly among 12 muffin tins
Bake for 40-50 minutes, until the edges start to brown just a bit, not the top
Allow to cool, the top with a dollop of sugar free whipped topping, or the pumpkin cheesecake mixture


Pumpkin Cheesecake Parfait

Ingredients:
1/3 cup canned pumpkin
24 ounces Fat Free or 1% cottage cheese
1 – 1 ½ cups Splenda for baking
1 tsp vanilla
1 tsp lemon juice
½ tsp pumpkin pie spice
Sugar free whipped topping

Directions:
Blend all ingredients except the whipped topping in a blender or food processor till smooth
Layer the blended mixture and whipped topping in a parfait glass or other small container. Use a very small amount of the whipped topping when layering, as it does add extra calories

Sugar Free Cranberry Sauce

Ingredients:
1 package fresh (or frozen) cranberries – about 3 cups
2 cups water
2 packages sugar free cranberry jello
 Splenda to taste

Directions:
Place cranberries and water in microwave for 5 minutes
Stir in the jello
Taste – if it needs sweetened, add the Splenda
Place in a blender and puree if you want it to be smooth
Place in refrigerator until ready to serve

Guilt Free Cheesecake

Ingredients:
24 ounces Fat Free or 1% cottage cheese
1 – 1 ½ cups Splenda for baking
1 tsp vanilla
1 tsp lemon juice
You can add one of the following for variations:
            2 tsp cocoa powder
            ¼ cup Key Lime Juice
            2-3 cups of fruit such as strawberries, cherries, peaches, etc…

Directions:
Place everything in a blender or food processor and blend till smooth
Place in refrigerator till ready to serve
